Zucchini Tart

Zucchini Tart (La tarte a la courgette)

2 zucchinis

1 tart base

2 eggs

1 cup of sour cream

Roquefort and goat cheese

Grated cheese


Preheat the oven to 390 degrees F.

Roll out the pastry and place in a cake tin.

Bake in the preheated oven for 15 minutes.

Cut the zucchinis in thin slices.

Spread the zucchinis over the pastry base and top with pieces of Roquefort and goat cheese.

Beat the 2 eggs with the sour cream and pour over the tart.

Sprinkle on the grated cheese.

Bake for a further 15 minutes or until the cheese becomes golden.


Serve hot with a green salad.

The little more: The zucchini tart is delicious warm as it is cold, thus ideal for a picnic.
