Zhu Jun’s Bread

• 3 cups sifted flour
• 1 5/8 cups cool water
• fork to mix water and flour
• 3/4 teaspoon yeast
• 1/2 teaspoon salt

1. Sift the flour in a medium bowl
2. Pour the water gently on the flour and mix with the fork
3. Scrape around the bowl, you should get a loose, shaggy kind of dough
4. Add the yeast
5. Add the salt

7. Cover with plastic wrap and let rise overnight

8. Next day: Preheat oven to 500ᵒ F

9. Move the dough around in the bowl and wait 15 more minutes to let rise again

10. Move the dough into the cast iron, and cover it

11. Bake for 1/2 hour + 15 minutes uncovered

You could add cheese, or olives, or raisins, or your favorite ingredient into the flour to obtain a specialty bread. Step 9: you also could sprinkle corn meal or any grain or seeds around your dough.
