Yacine’s Tajine

(Jewish North Moroccan Recipe)
1. Peel 5 onions, then cut in half and divide
2. Open can of no salt diced tomatoes
3. Peel 10 whole Roma tomatoes. Cut into cubes.
4. Put the onions into the pot. Add olive oil. Mix them up. Simmer
5. Peel 6 zucchinis. Wash the zucchinis
6. Add the tomatoes in the pot with the golden onions
7. Add the can of tomatoes into the pot. Mix
8. Peel 4 potatoes
9. Prepare the parsley. Cut into little pieces
10. Add the chopped parsley into the pot
11. Cut the zucchinis into big strips
12. Wash the okras. Cut into 2, 3 pieces each okra
13. Add 1 tablespoon of salt into pot
14. Add the okras, zucchinis and potatoes into the pot
15. Cover with water
16. Add sweet red pepper spice (found in an Indian store)
17. Simmer until the vegetables are tendered
18. 8 lbs of Extra lean beef stew
19. Wash the beef stew
20. Put the beef into another large pot at high temperature
21. Add more peeled and cut onions into the beef
22. Peel 1 garlic bulb
23. Add olive oil into the beef stew
24. Add 2 teaspoons of black pepper, 2 teaspoons of ginger powder, 2 teaspoons of yellow Moroccan powder, a pinch of cinnamon powder, and 1 teaspoon of red sweet pepper powder to change the color
25. Press the garlic cloves (not cut or slice)
26. cook the meat well done and add the garlic
27. Add more salt
28. Check to see if meat is tender & well done
29. For decoration: cut raw almonds in half and cut the pitted prunes into half
