Yacine’s Couscous Marocain

Ingredients for approx. 12 people:

• 5 Lbs beef stew meat
• 2 big onions
• 2 lbs carrots
• salt
• 5 tomatoes
• 1 bouquet cilantro (put thread around it to hold it together)
• 2 Tbsp salted butter
• 2 Tbsp ginger powder
• 2 Tbsp black pepper
• 1 Tbsp turmeric
• 1 Tbsp Moroccan coloring
• 8 little turnips
• 4 big Mexican turnips
• 5 Italian zucchinis
• 6 Spanish zucchini (calabazitas)
• 5 boxes couscous
• 2 green cabbages
• 2 cans garbanzo beans
• Olive oil

Directions:

1. In a large pot, put some olive oil, the sliced onions and the meat on high/medium heat on the stove
2. Mix often
3. dice the tomatoes
4. add 2 Tbsp of salted butter to the pot
5. add the tomatoes
6. add cilantro bouquet
7. add ginger powder
8. add the black pepper, turmeric and coloring to the pot
9. add boiling water almost to the top of the pot
10. add some salt
11. cover pot
12. cut all turnips in little pieces
13. add turnips to the pot
14. peel the carrots
15. slice them in half and then on the length
16. pour the couscous in a big bowl
17. cut the cabbages in quarters
18. In a second large pot, add the cabbages with some bouillon from the first pot
19. peel all zucchinis and slice them
20. add zucchinis and carrots to the second pot
21. wash the beans
22. add some bouillon juice from the pot to the couscous
23. when the couscous had puffed
24. put the meat on top
25. then arrange all vegetables on top of the meat, cabbages on top
26. put the garbanzo beans on top of everything
