William Kim & Jessica Chou’s Salmon

1 Lb Salmon
1/4 cup fresh lime juice
1/4 cup fresh orange juice
Parsley flakes
Basil leaves from the vegetable garden
1/2 cup first pressed olive oil
6 rounds Pepper
6 pinches Salt

1. Cut half of the salmon into small cubes
2. In a bowl, combine the oil, lime juice, orange juice, some parsley flakes, salt, pepper, basil, and mix
3. Add the cubed salmon and mix
4. Place slices of remaining fresh salmon on a big plate. Salt and pepper
5. Place the cubed salmon on top of the slices
6. Cool for 1 hour
7. Baste with the herb oil from the bowl
