Victor’s Chouquettes

• 1/2 cup water
• 1/2 cup milk
• 1 stick butter
• 3/4 cup flour
• 5 eggs at room temperature
• Pinch of salt
• Big sugars or pearl sugars

Preheat oven to 400ᵒF.
1. In a medium pot pour the water and the milk.
2. Cut the butter in pieces and add in the pot.
3. From low heat slowly bring to a boil.

4. Remove from the heat.
5. Add right away the flour and mix fast to obtain a dough.

6. Bring back the pot onto the heat for 2 minutes in order to dehydrate the dough while mixing vigorously.
7. After 2 minutes move the dough to a big bowl.
8. Add rapidly the eggs one after the other.
9. Mix fast.

10. Put teaspoons full of this mixture on a buttered oven tray.
11. Add big sugar on top of each chouquette.
12. Polish each of them with some egg yolk.

Stop the oven.
Bake for 10 minutes.
Heat the oven to 325ᵒF.
Bake for 15 minutes approx.
When the chouquettes are puffed, set the oven door ajar with the help of your oven gloves in between for 10 more minutes so the chouquettes will not deflate.
