Valentine’s Day Lemon-and-Rose Madeleines

3 tablespoons unsalted butter melted
6 tablespoons unsalted butter unmelted
1 tablespoon flour
2 teaspoons lemon zest
1 cup sifted flour
1/2 teaspoon baking powder
Pinch of salt
2 large eggs at room temperature
1/3 cup sugar plus 1 tablespoon
1 tablespoon fresh lemon juice
2 tablespoons rose water
Confectioners’ sugar for dusting

1. Preheat oven to 375 degrees.

2. Brush Madeleine molds with melted butter and dust lightly with flour.

3. In a small saucepan over low heat, warm remaining 6 tablespoons butter. Stir in lemon zest, and set aside to cool.

4. Combine sifted flour, baking powder, and salt in a mixing bowl.

5. Beat the eggs and sugar with an electric mixer until very thick about 4 minutes. Add lemon juice and rose water and blend 10 seconds.

6. Using a rubber spatula, gently fold half the flour mixture over eggs. Repeat with remaining flour mixture.

7. Fold quickly but gently in cooled butter until incorporated into batter.

8. Spoon batter into the Madeleine tins. Bake 8 – 11 minutes.

9. Let the Madeleines to cool. Dust with confectioners’ sugar before serving.

10. A Madeleine is made for dipping in tea – Earl Grey- which adds depth to the flavor of a lemon Madeleine.
