Strawberry Yogurt Popsicles


For the syrup:

  • ½ cup granulated sugar
  • ½ cup water

For the popsicles:

  • 1-pound strawberries halved
  • 1 tablespoon lemon juice
  • 1 cup plain yogurt


  1. Make the syrup: Stir the sugar and water together in a small saucepan over medium heat. Bring to a boil and stir until sugar is dissolved. Chill until cold in the freezer
  2. In a blender puree the strawberries, lemon juice, and 3 tablespoons of the syrup until smooth. Transfer to a bowl
  3. Whisk in this bowl the yogurt to smooth out the lumps
  4. Fill the molds with this mixture until the molds are filled to ¼ inch from the top
  5. Freeze for 1 hour. Remove the mold from the freezer and insert the popsicle sticks, leaving about 2 inches of each stick above the mold. Return to the freezer until frozen.
