Spring Courgettes (round squash) de Nice farcies et gratinées

Ingredients for 5 people
5 courgettes (round squash)
1 red pepper sliced
1 yellow pepper sliced
1 green pepper sliced
2 red onions cut in little pieces
5 garlic cloves sliced
Parsley, thyme
1 handful of rice grains
1/2 lb sausage meat
1/2 lb lean ground beef
Grated Parmesan cheese
Olive oil
Salt, pepper
Fresh basil
Bread crumbs
3 tomatoes diced
1. Cut the head of the courgettes.
2. Empty the insides and set their flesh aside. Cut the insides in small pieces.
3. Boil the empty courgettes in salted water for 25 minutes
4. After approx. 25 minutes place the precooked empty courgettes on an aluminum lined oven sheet. Sprinkle non cooked rice grains on the bottom of the courgettes to absorb the water left over.

5. In the meantime, brown the onions in olive oil.
6. Brown the peppers in olive oil in another frying pan.





7. Add the peppers to the onions.
8. Add the garlic, salt and pepper

9. Brown the courgettes flesh pieces in another frying pan.

10. Add both ground meats in the onions/peppers/garlic frying pan.

11. Add diced tomatoes, then add cut fresh basil in the courgettes’ frying pan

12. Add parsley and thyme to the meat
13. Preheat oven to 350ᵒ F.
14. Stuff the courgettes with the meat mixture using a spoon

15. Stuff the courgettes with the vegetable.
16. Sprinkle on the breadcrumbs.

17. Sprinkle on the Parmesan cheese

18. Leave the courgettes in the hot oven for 30 minutes
