Sauces from Chad

Basic Red Meat Sauce

½ c. oil
2 lbs beef, cubed
1 medium onion, chopped
12-15 cloves garlic, crushed with 2 t. salt
1 Maggi/bouillon cube
¼ c. tomato paste
1 whole pigment pepper
Salt to taste

In a large pot, heat oil until it’s very hot. Add onions and cook until translucent. Add garlic. Allow the onions to brown. Add meat, piment pepper and ½ c. water. Let meat cook through, stirring occasionally. Add tomato paste and add water as necessary to thin sauce as desired. Add maggi. Stir and simmer for ten minutes. Serve with boule or over rice.

Lettuce Sauce

½ c. oil
2 lbs beef, cubed
1 medium onion, chopped
12-15 cloves garlic, crushed with 2t. salt
1-3 medium heads of romaine lettuce, shredded
Marble-sized chunk of natron or add 1-2t. baking soda
½ c. peanut butter (sugar-free)
2-5 Maggi cubes
¼ c. tomato paste
Salt to taste
Pigment to taste

In a large pot, heat oil until it’s very hot. Add onions and cook until translucent. Add garlic. Allow the onions to brown. Add meat and ½ c. water. Let meat cook through, stirring occasionally. Add lettuce and allow to wilt down. Stir in natron or baking soda. Let simmer for ten minutes or until lettuce is really mushy. Add tomato paste and add water as necessary to thin sauce as desired. Add Maggi. Stir and simmer for ten minutes. Stir in peanut butter and enough water to thin sauce as desired. Allow to simmer for an additional five minutes. Salt to taste. Piment to taste. Serve with boule or over rice.

Fresh Gumbo Sauce

½ c. oil
2 lbs beef, cubed
1 medium onion, chopped
12-15 cloves garlic, crushed with 2t. salt
1 whole pigment pepper
12-14 pieces of okra, sliced
2-5 Maggi cubes
Salt to taste

In a large pot, heat oil until it’s very hot. Add onions and cook until translucent. Add garlic. Allow the onions to brown. Add meat, pigment pepper and ½ c. water. Let meat cook through, stirring occasionally. Add okra and cook until mushy and not really in the form of okra adding water as necessary. Add Maggi. Stir and simmer for ten minutes. Serve with boule or over rice.

Option: add1/4c. Tomato paste if you want.
