Ryan’s French Bread

• 4.5 cups flour
• 1.2 cups of water
• 1/2 tbsp salt
• 1 pack of active dried yeast
• 2 large bowls
• Oven rack covered with parchment paper
• Pan filled with water
• Razor blade or a sharp knife

1. Pour into bowl the flour, the water and salt.
2. Mix with a spoon. When the dough begins to thicken, knead by hand until a ball is formed.
3. Cover bowl and let the dough rest for 30 minutes.
4. Prepare the yeast with warm water like it says on the package.
5. Past 30 minutes, add the yeast in the bowl and start kneading. Work with both hands, then form the dough into a ball.
6. In another large bowl oiled with paper towel, and lightly floured so the dough will not stick: place the ball and cover with a towel.
7. Leave for 3 hours at room temperature.
8. Prepare the oven rack with parchment paper and flour it.
9. Remove the dough from the bowl using a spatula to scrape the bottom.
10. Push your fist into the dough to degas.
11. Give shape to the dough as you wish. Flour it lightly.

13. Place a towel over the bread and let stand 15 to 20 minutes.
14. In the meantime preheat the oven 400ᵒ – 425ᵒ F.
15. Place the pan filled with water at the bottom of the oven.
16. Bake in the oven halfway up for approx. 30 minutes.
17. Turn the bread over and see if the bottom is cooked. If it is too soft on the bottom, continue baking another 10 short minutes at 350ᵒF placing the bread upside down without the pan.
18. Let the bread cool completely.
