Risotto Nature for 4 People

Peel and cut 1 onion in small pieces.
Heat 2 1/2 cups chicken broth.
Heat 2 Tablespoons olive oil and 1 tablespoon butter in a frying pan.
Add the onion and fry for 3 minutes without coloring it. Salt lightly.
Add 3/4 cup Arborio Rice and cook for 2 minutes at very low heat stirring it.
Pour 1/2 cup white dry wine and wait until the rice absorbs it all.
Then pour the boiling chicken broth on top of the rice until it covers it up, and stir.
When the rice has absorbed the broth, pour some more again and cook stirring from time to time until all absorbed.
Continue pouring the broth and stirring until the rice is cooked, approx. 20 minutes.
Add salt if needed.
Turn off the heat, add 1 tablespoon butter and stir.
Add 3 tablespoons grated Parmesan.
Serve at once.
