Quiche Lorraine

· Short crust pastry
· 5 oz/150 g grated Swiss cheese
· 5 oz/150 g lean smoked bacon
· 5 tbsp/75 g butter
· 4 eggs
· ½ cup/125 g heavy cream
· Black pepper
· A pinch of nutmeg

1. Prepare the short crust pastry (check our recipes)
2. Grease a quiche mold with butter (7in diameter). Line with pastry and trim off the excess. Prick the pastry all over with a fork. Preheat the oven to about 450 degrees F. Put the empty quiche in the oven for 10 minutes
3. Cut the rind from the bacon, remove any gristle, and dice the bacon. Brown lightly in a pan.
4. Beat the eggs with the cream and season with nutmeg and pepper. Spread in the diced bacon, sprinkle with ½ the grated cheese, then mix.
5. Take out the empty quiche from the oven (the crust should be still white). Pour in the middle of the base the above mixture and sprinkle the top with the second half of the grated cheese.
6. Bake in the oven for 30 minutes. Serve warm.
