Quiche à la Provençale by Our 2015 Summer Cooking Class


Dough homemade or sheet of dough (short pastry) bought from the store
3 tomatoes
4 garlic cloves
3 large onions minced
2 eggs
1/2 cup light cream
Thyme, oregano, bay leaves
Crushed red chili pepper if you like spicy
salt / pepper


Peel the tomatoes, cut them in fourth.
In a medium saucepan, put the garlic, the tomatoes, the onions, and the thyme, oregano and bay leaves, and the optional chili pepper. Add salt and pepper.
Simmer, cover, and stir from time to time for 30 minutes.
Let cool.
In a bowl, beat the eggs and the cream. Pour into the cooled saucepan (I put mine in the fridge for a few minutes)
Taste and add seasonings if needed.
Heat the oven to 350ᵒF.
Grease a baking dish.
Flatten the dough, then move it into the baking dish.
Pour in the tomato mixture, and let bake for 25 minutes.
