Plum Cobbler from our 2015 summer cooking class

Ingredients:
• 1 cup sugar
• 12 fresh plums seeded and sliced
• 2 Tbsp instant tapioca
• zest from one large orange
• 1/4 teaspoon ground cinnamon
• 1 1/2 cup flour
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 1/2 cup butter
• 1/3 cup milk
• 1 egg lightly beaten

1. Preheat oven to 350ᵒF

2. In a large bowl, combine 3/4 cup sugar, plums, tapioca, orange zest, and cinnamon. Pour the mixture into a baking pan

3. Cut the butter in little pieces
4. In a medium bowl, combine the remaining 1/4 cup sugar, flour, baking powder and salt

5. Add the butter, mixing it with your clean hands until it becomes coarse crumbs

6. Stir in the milk and egg. Do not over mix.
7. Drop the batter in large spoonfuls onto the fruit mixture

8. Bake for 35 minutes, until the cobbler topping is nicely browned and the filling is bubbly.
