Pâte Brisée


2 1/2 cups flour
11 tablespoons butter not too cold, not too warm cut in little pieces
1/2 teaspoon salt
3 tablespoons sugar
1/4 cup lukewarm water
1 egg yolk

1. Preheat the oven to 350ᵒF.
2. Butter a tart baking dish all over.
3. Take the butter from the fridge 3 hours before making the dough or put in the micro wave 1 minute on low. The butter should not be melted, but half soft.
4. Mix the flour and the salt and the sugar in a medium bowl.
5. Add the butter, mixing with the flour rapidly and from the tip of your fingers for 2 or 3 minutes.
6. Add the egg yolk and the water.
7. Mix with fingers.

8. With your hands, spread the dough in the bowl.
9. Spread and roll the dough on parchment paper.
10. Fold in 4, and then spread on to the baking dish.
11. Pick lightly with a fork
12. Cut the extra dough from the edge of the tart dish.

13. You could use the extra dough to make a design on top of your tart like for example an happy face.
14. Peel, cut peaches and add onto the pâte brisée.
15. Add on top the extra dough to form a design.

16. Bake for approx. 45 minutes.
