Okra Summer Dish

Ingredients:

• 1 ½ cup Greek Organic Plain yogurt
• 4 garlic cloves pressed
• 1 lemon grated
• 1 teaspoon cumin seeds
• 1 teaspoon coriander seeds
• 1 teaspoon red pepper flakes
• Sea salt
• Olive oil
• Fresh mint
• 1 Lb. fresh okra

1. Soak a few wooden skewers in water.
2. Preheat a grill.
3. Pour the yogurt in a medium bowl.
4. Add the garlic, the lemon zest.
5. Squeeze half of the lemon on to the yogurt.
6. Add cumin, coriander, red pepper flakes, and a pinch of salt.
7. Mix with a fork, and refrigerate.
8. Insert the okra onto the skewers, one between two of them as shown on the picture.

9. Put some olive oil in a small bowl, add a pinch of salt. Mix.
10. Brush both sides of okra with the oil.
11. Cook the skewers on hot grill about 3 minutes on each side until charred.

12. On your plate, spread the yogurt sauce, drizzle with oil and top with okra.
13. Sprinkle with fresh mint.
