Ms. Doron’s No-Cream, Pasta Primavera

• 1 package of spaghetti
• 3 zucchinis chopped
• 3 bell peppers (red, yellow, green)
• 1 cup grape tomatoes
• 1/2 cup olive oil
• 1/2 tsp lemon juice
• 1/4 tsp salt
• 1/4 black pepper
• 1/4 tsp red pepper flakes
• 1 tablespoon Italian seasoning
• 1 tablespoon butter
• 1 sweet onion
• Fresh basil leaves
• 1/3 cup fresh parsley
• 3 tablespoons balsamic vinegar
• Parmesan cheese

Preheat oven to 450- degrees. Line a baking sheet with aluminum foil.
Bring a large pot of water to a boil.
In a bowl, toss vegetables with olive oil, salt, pepper, Italian seasoning, and lemon juice.
Arrange vegetables on the baking sheet and roast 15 minutes in the preheated oven, until tender.
Heat remaining olive oil and butter in a large skillet. Stir in onion and garlic and cook until tender.
Mix in cooked pasta, basil, parsley, and balsamic vinegar. Remove from heat and toss with roasted vegetables. Toss with cheese and serve!
