Mousse au Chocolat

Chocolate mousse

10 ½ oz best semisweet chocolate
4 egg yolks
2/3 cup sugar
3 ½ tbsp cream
8 egg whites

Melt the chocolate in a double boiler.
Whisk the egg yolks with 4 teaspoons of sugar until frothy.
Then stir in the cream.
Draw the chocolate under the egg yolk and sugar mixture.
Whisk the egg white with the remaining sugar until stiff, and fold under the chocolate mixture.
Fill glasses or small molds with the mousse and serve cold.
