Mom’s Potatoes and Tomatoes

Preheat oven to 410 degrees F
Wash 10 small Dutch potatoes, dry, and cut them in 4
Cut 5 tomatoes into big quarters
Oil the oven tray
Put on top the potatoes plus 5 non peeled garlic cloves
Put the tomatoes between the potatoes
Add 3 full tablespoons of olive oil
Mix and cook for 40 minutes
Cover with thyme and cook for 5 more minutes
Check with a little knife if it’s ready
Serve by scraping the bottom of the tray
