Macarons

• 4 extra large white eggs at room temperature
• 3/4 cups sugar divided in 2 parts
• 1 cup powdered sugar
• 1 cup powdered almond
• Light food coloring

1. Preheat oven to 300ᵒ F
2. Place egg whites in a bowl and mix not too fast with electric mixer until it looks like snow
3. Pour first part of sugar, and mix until it forms like a bird beak
4. Pour second part of sugar, and mix a little faster until it looks stiff and creamy
5. Mix powdered almond and powdered sugar
6. Pour the mixture into the whites
7. Add light food coloring
8. Fold into the egg white mixture
• Scraping surface by giving rapid strokes
• Flattening in a star shape
9. Prepare baking sheets with parchment paper
10. Pipe 1-inch disks of batter onto the baking sheets
11. Let the macarons stand at room temperature until a dry skin forms on its surface about 15 minutes
12. Bake with oven door slightly opened until the macarons are completely dry about 15 minutes
13. Let rest for 15 minutes before sandwiching 2 macarons with any desired fillings (cake frosting, jam, butter cream, Nutella, custard cream, caramel, etc…)
