Linguine with Shrimp and Lemon Oil


1/2 cup olive oil
2 lemons zested
1 lb linguine pasta
2 tbsp olive oil
2 shallots diced
2 garlic cloves minced
16 oz frozen shrimp
1/4 cup lemon juice
1 tsp salt
1/2 tsp freshly ground pepper
3 cups arugula
1/4 cup chopped fresh Italian parsley


Lemon Oil:
Mix 1/2 cup olive oil with zest of one lemon
Cook pasta in a large pot of boiled salted water for 8-10 minutes. Keep 1 cup of pasta water for future use. Drain pasta.
Pasta Dressings:

In a large skillet, bring on medium heat 2 tbsp olive oil
Add shallots and garlic, cook for 2 minutes
Add shrimp and cook until pink about 5 minutes
Add pasta, 1/4 cup lemon juice, 1 zested lemon, salt and pepper
Mix well
Turn off heat and add arugula
Add lemon oil
Add pasta water
Add chopped parsley
Mix well and serve immediately
