Lemon-Thyme Ribeye Roast

3 tbsp chopped fresh thyme
2 tbsp minced garlic
1tbsp freshly grated lemon peel
1 tbsp olive oil
2 tsp coarse grind black pepper
1tsp salt

To prepare the rub, combine all ingredients in a small bowl. Stir to mix well. Each rub to season 6-8 lb. roast. Rub roast and cover in saran wrap tightly and refrigerate overnight until it’s time to cook. Cook roast at 350 degrees Fahrenheit about 2 1/2 hours.
