Lemon Pie – The Easy Way

For 6 people

3 lemons

1 sheet pastry dough

2/3 cups sugar

½ stick unsalted butter

4 eggs

1 tablespoon corn starch

For the meringue:

1 cup powdered sugar

4 eggs whites

Preheat the oven at 350 degrees F.

Mix well the whole eggs with the sugar in a big bowl.

Add the lemon juice and the zest of the lemon.

Add the melted butter. Then the corn starch diluted in one tablespoon of warm water. Mix.

Apply the dough in a buttered pie baking dish. Insert a fork in the dough to make a few little holes.

Pour the lemon mixture on the pie. Cook for 35-40 minutes until the lemon cream becomes golden.

Let it cool at room temperature.

While the pie is cooking, let’s work on the eggs whites with the electric mixer. Add a dash of salt. When the whites start to rise, add one tablespoon of the powdered sugar, then change to a maximum mixing speed while pouring the rest of the sugar.

When the pie is not too hot any longer, apply the meringue with a spatula. You make pointy shapes with the help of a whisk, dipping down and bringing up quickly to form peaks.

Cook the pie for a few minutes at high temperature, and check that the meringue doesn’t burn.
