Lebanese Potato Koufta

· 5 potatoes (boiled)
· 5-6 eggs (beat all five or six)
· 3 lbs. Minced lamb (reduced fat content)
· 1 onion (diced)
· Salt
· Cumin
· Pita bread

Boil the potatoes. Peel skin off. Mash potato with lamb meat and onion. Add 2 tablespoons of salt and cumin. Make “burgers” of this meat mix. Dip in eggs. Fry in olive oil. Serve with pita bread.
Can add on the side: tomato slices, yogurt, pickles, olives, etc… to taste.
