Lebanese Omelette “Ejjeh”

Ingredients:
· 1 tablespoon of flour
· 1 bunch of parsley
· ½ bunch of mint
· 2 small onions
· 5 eggs
· Pepper
· Salt
· Spices
· Olive oil

Directions:
Cut the parsley, onion, and mint into very small pieces. Add salt to the mix. Mix well. Add 1 tablespoon of flour. Add the 5 eggs. Mix very well. Heat olive oil in a pan. Put 1 tablespoon of “Ejjeh” in oil over medium heat until red. Turn over. Serve in pita bread.

Optional: Eat with olives, tomato, lettuce, pickles.
