Halloween Family Minestrone with Baby Oyster Mushrooms

1 pint cherry tomatoes
3 small peppers
Green beans trimmed and cut in half (half of the pack ready to use, just cut in half)
Olive oil
1/2 cup white wine
Salt and pepper
1 large onion chopped
3 large cloves garlic thinly sliced
2 ears fresh corn, kernels cut from cob
2 squashes cut into 1/2-inch dice
Pinch of chili pepper
Pinch of paprika
Vegetable stock
Canned Roma tomatoes drained and chopped
Cooked Orzo or packs of Mexican baby pasta
Baby Oyster Mushrooms
Fresh diced ginger

1. Cut in half the cherry tomatoes and spread them across a baking sheet covered with aluminum foil.
2. Cut the peppers in length after taking the seeds out and add them to the tomatoes.
3. Add the green beans on the baking sheet.
4. Drizzle with oil and season with salt and pepper.

5. Roast in 425ᵒ F. oven for 15 minutes, checking and shaking the baking sheet for an even roasting.
6. Remove from oven and set aside to cool.
7. Heat oil in a large pot over medium heat.
8. Once oil is warm, add onions and garlic.
9. Cook, stirring about 8 minutes or until onions are translucent.
10. Pour the white wine.
11. Add corn, squash, chili and paprika, and cook for 15 minutes.

12. Add the baking sheet mixture, and cook for about 3 minutes.
13. Season with salt and pepper.

14. Stir vegetable stock and Roma tomatoes into pot.
15. Lower heat and simmer 20 minutes.
16. Cook the Orzo pasta
17. In a frying pan heat olive oil and add the ginger
18. Then the mushrooms
19. After a few minutes add the mushroom mixture to the soup
20. Simmer the soup, add water if necessary depending how thick you like it

21. Serve the soup and add on top a ladle of pasta
