Gianna’s, Gabi’s, and Savina’s cupcakes



1 large egg
1/2 cup sugar
1 package cream cheese at room temperature
Pastry bag

2 1/4 cups cold water
3/4 cup vegetable oil
1 tablespoon vanilla extract
5 teaspoons balsamic vinegar
3 1/2 cups flour
3/4 cup cocoa powder
2 teaspoons baking soda
2 1/4 cups sugar
1 teaspoon salt
3/4 cup semisweet mini chocolate chips

1. Prepare 2 racks in the lower and upper thirds of the oven. Preheat the oven to 350ᵒ F.

2. Line the muffin pans with paper cupcake liners.

3. Make the filling:

• In a medium bowl, beat the egg, sugar, and cream cheese until smooth
• Scrape the filling mixture into the pastry bag

4. In a large measuring cup, combine the water, oil, vanilla extract, balsamic vinegar.

5. Make the batter:

• In a large bowl that has a spout, whisk together the flour, cocoa powder, baking soda, sugar, and salt until blended
• Slowly pour the liquid from the measuring cup into the flour mixture, stirring with a wooden spoon until smooth

6. Pour the batter into the muffin cups using the spout to help filling each of them three-quarter full.

7. Pick up the pastry bag. Use one hand to guide the tip and the other to squeeze the top of the bag, insert the tip into the center of each cupcake, and gently squeeze a small amount of the filling into the batter.

8. Sprinkle the top of each cupcake with the chocolate chips.

9. Bake for approx. 30 minutes.

10. Let cool about 20 minutes.
