Gazpacho

Ingredients:
· 1 cucumber peeled and cut in little pieces
· 1 medium pepper cut in little pieces
· 1 small onion cut in little pieces
· 1/3 cup parsley
· 21/2 lbs ripe, peeled tomatoes cut in pieces
· 1 cup tomato juice
· 3 Tbsp red vinegar
· 3 Tbsp olive oil
· 2 garlic cloves cut in little pieces
· 2 small tsp salt

Mix well in your blender and refrigerate. Serve cold in soup bowls.
