Flan by Mimi and Iris

1/2 cup plus 2/3 cup sugar
3 whole eggs
3 egg yolks
3 cups whole milk
2 teaspoons vanilla extract

Preheat oven to 350F. Have ungreased 9 inch round or 2 quart square baking dish
Cook 1/2 cup sugar over medium heat in heavy medium sized saucepan, stirring almost constantly with wooden spoon until melted.
Immediately pour hot caramel syrup into baking dish and swirl until bottom is coated.
Caramel will harden but will melt later as flan bakes.
Whisk eggs and egg olks with sugar until smooth. Whisk in milk and vanilla. Pour mixture into dish with caramel.
Set dish into larger baking pan and fill larger pan with hot water to come up halfway.
Bake until knife test comes out clean, 35-45 minutes. Center should still be slightly soft. Cool in water bath and refrigerate 1-8 hours.
Run sharp knife around edge of flan to release it. Place large rimmed serving plate over baking dish and invert so flan unmolds. Refrigerate until serving time.
