Fish Curry

· 2 onions
· 5 garlic cloves
· Fresh grated ginger
· Zest of 2 organic lemons
· 2 mangoes
· Coconut milk
· Curry powder
· Turmeric
· Coriander seeds
· Aniseed
· 2 or 3 cloves
· Olive oil

Brown the onions cut in small pieces. Then add the curry powder, and mix. Add the mangoes cut in pieces, melt it lightly, add the zest of the lemons on top, add the coconut milk, simmer, and then add the fish at last because the fish cooks very fast. Add a little fresh lemon juice.

Use sea bass or albacore or fish very plain with no odor or too much personality. Cut the fish in little pieces. Add the garlic cut into small pieces, olive oil, the ginger, salt and pepper, turmeric, coriander seeds, and the aniseed.
Cook this recipe in a Wok, then serve directly on the table adding fresh coriander for decoration
