Financier à la Framboise (Raspberry cupcakes)

• 2 Tablespoons hazelnut powder (whole hazelnuts broken into very little pieces)
• 2/3 cup almond powder
• 3 egg whites
• 3/4 cup powdered sugar
• 1/3 cup flour
• 11/2 stick unsalted butter

1. In a small saucepan, bring the butter to a boil. Listen to the noise. When the noise goes away, and the butter becomes light brown, turn off the heat.

2. Pour very slowly the butter in a glass making sure that the black particles stay at the bottom of the pan.

3. Let the butter cool down.
4. Preheat oven to 500 ᵒ F.
5. Roast the hazelnut powder on aluminum paper.
6. Oven down to 400 ᵒ F.
7. In a large bowl, mix the almond powder and the roasted hazelnut powder (it should be 20% hazelnut to 80% almond).

8. Add the flour, the egg whites, the powdered sugar, the cooled butter, and mix.

9. Put 3 raspberries in each little cup.

10. Pour the mixture on top of the raspberries, 2/3 from the top of the little cups.
11. Bake approx. 20 minutes.
