Emily and Joe’s Carrot Cake

4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3/4 cups grated carrot
1 cup chopped walnuts
2 snack size containers apple sauce
Preheat oven to 350F and flour a 9×13 pan.
In a large bowl, beat together eggs, oil, white sugar and vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots and apple sauce. Fold in walnuts. Pour into pan.
Bake in oven for 40-50 minutes, toothpick test pass.
Let cool in pan for 10 minutes and then turn out onto wire rack for cooling.
Frosting – 1 can of cream cheese frosting. Color orange for festivity.
