Duy’s Fried Rice

¼ Onion – diced

Chopped green onions

½ bag of Chinese sausage – diced

1 bag frozen mixed peas & carrots

3 eggs

6 bowls of Jasmine rice (cook drier than usual yet still very hot)

1- 1 ½ teaspoon Salt

2 teaspoon Black Pepper

3 tablespoons Soy Sauce

1. In a large pot or pan heat 5 tablespoons on oil on high heat for 3 minutes (until smoke comes up)

2. Stir in diced onions(not green), cook for 2 minutes

3. Crack eggs into pan, cook for 2-3 minutes

4. Add all rice into pan, stir rapidly and very strong with a spatula and spoon. Stir for 7 minutes

5. Introduce salt, pepper, soy sauce, peas and carrots, green onions. Stir for 4 minutes

6. Garnish with cilantro stem when serving.
