Delicious Brazilian Cheese Bread By Gabby, Gianna, Sarah

Ingredients:

1 cup whole milk
1/2 cup vegetable oil
1 teaspoon salt
2 cups tapioca flour
2 eggs
1 – 1 1/2 cups Parmesan cheese

Directions:

1. Preheat oven to 450ᵒF

2. Bring to a gentle boil the milk, oil, and salt in a medium saucepan, whisking occasionally, over medium heat. Remove from heat as soon as you see big bubbles coming.

3. Add the tapioca flour to the saucepan and stir.

4. Cool the dough.

5. Beat the dough by hand.

6. Whisk the eggs together in a small bowl.

7. Beat the eggs into the dough in two parts. Wait until the first eggs part has been fully incorporated into the dough before adding the second.

8. Beat in the cheese by hand until fully incorporated.

9. Line a baking pan with parchment paper.

10. Scoop the dough with an ice cream scoop on the parchment lined baking sheet. Dip your scoop in water to prevent sticking.

11. Put the puffs into the oven, immediately turn down the heat to 350ᵒC.

12. Bake for 25-30 minutes.
