Coulis de Tomates, Coulis Tomato Sauce for your Pizza, Pasta, squashes, etc.

For 4 people:

• 2 Lbs ripe tomatoes
• 1 onion finely diced
• 1 bouquet garni composed of 3 thyme branches, 1 laurel leaf, 6 Italian parsley sprigs tied together
• 2 garlic cloves finely diced
• 1 teaspoon of honey
• olive oil
• salt, pepper

Preparation: 15 minutes Cooking: 10 minutes

 Boil water. Immerse the tomatoes for 5 minutes. Drain and let cool before peeling the skin. After removing the skin, cut the tomatoes in four, and squeeze them to get rid of the water and the seeds.
 Heat a little bit of olive oil in a saucepan. Brown the onion. Add the garlic, then the tomatoes, and the bouquet garni. Pour the honey. Salt lightly and add pepper.
 Cook on medium/high for 10 minutes. Take out the bouquet garni, and mix with a blender
 You can keep it in the refrigerator for 2 to 3 days.
