Cindy’s Stuffed Tomatoes

1. 6 small tomatoes that you slice off the top.
2. Scoop out the pulp and juice, and keep.
3. Add one egg yolk poached in each tomato.

4. Add salt and pepper.
5. Add dried oregano from the garden
6. Add Mozzarella in each tomato.
7. Add a little pulp and juice taken out earlier.

8. Place the stuffed tomatoes in a greased baking dish.
9. Bake at 400ᵒ F for 10 – 15 minutes.
10. Fry the mash potatoes.
11. In the meantime you can drink the rest of the tomato pulp and juice.
12. Serve the stuffed tomatoes with a side of mash potatoes.
