Choux au Fromage

makes 15


1 cup flour

150 ml water

3.5 tablespoons butter

2 eggs

1 cup Parmesan, or preferred

pinch of salt, to taste.

In a saucepan, combine water, butter and salt. Pour at once the flour after sifting, when water starts to boil. Keep stirring until dough forms and is not sticking to the saucepan. At this time, take the saucepan away from the heat, keep stirring for a couple minutes. Add eggs. Blend well and add cheese, like adding chips to a cookie dough. Place on a cookie sheet and make tablespoon sized balls, spaced evenly. Cook in the oven at 375 degrees until golden.
