Chicken Pasta


  • 8 ounces whole wheat spaghetti
  • Olive oil
  • 7 ounces sun-dried tomatoes
  • 1 pound chicken tenders
  • 1 red onion, sliced thinly
  • 6 ounces package spinach
  • 1 cup golden raisins
  • 1/2 cup pine nuts toasted
  • Salt and fleshly ground black pepper
  • Parmesan cheese
  • Chopped fresh basil


  1. First cook the pasta according to the package directions, drain and set aside.
  2. Slice the sun-dried tomatoes.
  3. In a skillet over medium heat, heat some olive oil.
  4. Add the chicken and brown it for 5 to 6 minutes until cooked through.
  5. Remove the chicken and set aside.
  6. Lower the heat and add the onion. Cook until the onion is tender.
  7. Add the sun-dried tomatoes, spinach, golden raisins, and the chicken.
  8. Cook for 3 minutes.
  9. Add the pasta and a little bit of water to moisten.
  10. Add the pine nuts and mix well.
  11. Season to taste with salt and peppers.
  12. Garnish with Parmesan cheese and fresh basil.
