Brian Phamton’s Moist Chicken

• 6-ounce boneless chicken breast with skin
• salt and pepper
• 2 Tablespoons first pressed olive oil
• 5 halved fresh white mushrooms
• 2 halved shallots
• 2 sprigs fresh rosemary
• 1/4 cup water
• 1/2 juice lemon
• cast iron or ovenproof skillet

Preheat the oven to 350 degrees F.
Put generously salt and pepper on both sides of the chicken
Place the skillet over medium heat and drizzle with olive oil
Lay the chicken skin-side down and cook for about 5 minutes until the skin becomes crisp
Add the mushrooms, shallots, and rosemary
Put the whole thing in the hot oven and roast for 15 minutes or until the chicken is cooked, and the mushrooms and shallots are soft and roasted
To make the sauce, take all the stuff out of the pan on a plate to keep warm except the fat
Keep 1 tablespoon of the fat in the pan
Stir in the water and lemon juice
Cook over medium heat, scraping up with a wooden spoon about 5 minutes
Drizzle the pan sauce over the dish
Season with salt and pepper
