Brian and Mitchell’s Orange-Cardamom Madeleines

• 1/2 stick unsalted butter plus more for the pan
• 1 tablespoon honey
• 1 tsp pure vanilla extract
• 3/4 cup flour
• 1 tsp baking powder
• 3/4 tsp ground cardamom
• 1/4 tsp salt
• 1/4 cup granulated sugar
• 2 large eggs
• 3/4 cup confectioners’ sugar
• 1 tsp finely grated orange zest
• 2 tbsp strained orange juice

1. Brush molds of madeleine pan with butter.
2. Melt butter in a small saucepan over low heat. Remove from heat.
3. Stir in honey and vanilla. Let cool 10 minutes.
4. In a small bowl whisk flour, baking powder, cardamom, and salt.
5. Preheat oven to 325ᵒ with rack in center.
6. In a medium bowl stir together sugar and eggs. Fold in the flour mixture until combined. Fold in the butter mixture until combined. Cover with plastic wrap, and refrigerate 30 minutes.
7. Spoon batter halfway into the madeleine molds.
8. Bake 7 to 8 minutes until golden.
9. Let cool slightly. Unmold the madeleines onto a large plate.
10. For the orange glaze: stir together sugar and orange zest and juice in a small bowl .
11. Using a small pastry brush, coat each madeleine with the glaze.
12. Let set a few minutes.
