Bortch (Russian Soup)

The bortch is a good comforting soup. The recipe comes from the country of Russia which endure a very harsh long winter. You should prepare it using a pressure cooker, it doesn’t even take one hour to fully cooking it.


3 lb of beef (leg) cut in pieces
1 beef bone
1/2 lb carrots
1/2 lb turnips
1/2 lb potatoes
2 onions with 2 cloves in
2 shallots
2 garlic cloves
1 cooked red beet
sour cream



Boil 8 cups of water in the pressure cooker. Throw in the meat, the bone, all the vegetables finely cut except the red beet. Salt and pepper. Close the pressure cooker and let cook for 50 minutes.

Grate the cooked red beet. Add it to the soup a few minutes before serving.

Put one tablespoon of sour cream and a little bit of vinegar in each plate.

Pour the bortch on top.
