Beignets à la Citrouille (Pumpkin Beignets)

Ingredients:

– 1LB pumpkin seeded and cut into cubes
– 2 Tablespoons sugar
– 2 Tablespoons unsalted softened butter
– 2 eggs lightly beaten
– 1/2 cup flour
– Canola oil for frying
– Powdered sugar for serving

1. Put the pumpkin cubes into a saucepan; cover with water and let boil for approx. 30 min or until the pumpkin is soft.

2. Drain off; mash up the pumpkin with the sugar, butter, and the eggs; incorporate the flour while mixing.

3. Heat the oil in a frying pan. Pour a ladle of the pumpkin dough, and let it become golden, approx 5 min. Then drain on plate lined with paper; Serve warm with the powdered sugar.
