Arugula and Taleggio Cheese Pie for Pi Day 2016: From Ollie and Corinne


200 g plain flour
1 Tbsp poppy seeds
1 Tbsp chopped fresh marjoram
100 g butter chilled and diced
200 g fresh arugula
300 g cream cheese
200 g taleggio cheese diced

2 Tbsp breadcrumbs
2 eggs
salt and pepper

• Sift the flour.
• Pour in an electric food processor: the flour, a pinch of salt, the poppy seeds, marjoram, butter, cold water to make a soft pastry.
Shape into a ball, cover with cling plastic, and rest for one hour at least.
• Preheat the oven to 350ᵒF.
• Grease a pie tart or tin with butter.
• Roll out the pastry and place it in the tin. Pick it with a fork and bake it for a few minutes.
• Boil the fresh picked Arugula for a few minutes in salted water. Drain and squeeze out as much liquid as possible.

• Put in an electric food processor: the arugula, both cheeses, the breadcrumbs and eggs. Season with salt and pepper.

• Fill in the lined pastry baked tin.

• Bake for about 40 minutes, and let rest for the same time.
