Approx. 30 Falafels

Ingredients

• 1 pound of dry garbanzo beans (chick peas)
• 4 garlic cloves diced
• 1 onion chopped
• 1 teaspoon of baking soda
• 1 teaspoon of golden sesame seeds
• 3 tablespoon of flat parsley chopped
• 3 tablespoon cilantro chopped
• 2 teaspoons cumin
• 2 teaspoons powered coriander
• 1 teaspoon paprika
• a pinch of cayenne pepper
• salt
• grapeseed oil for frying

Preparation

1. Soak the beans in water for 24 hours, and cover the bowl.
2. The next day, drain and dry the beans.
3. Pour the dry beans in a food processor.
4. Mix lightly to obtain a grainy mixture.
5. Add the onion, and the garlic.
6. Add the salt, cayenne pepper, cumin, paprika, powered coriander, and baking soda. Mix lightly.
7. Add the fresh cilantro, the parsley, the sesame seeds.
8. Mix with small pulses and scrape the sides.
9. Pour the mixture into a bowl and stir it with a fork.
10. Wet your hands, and start making falafels with your hands, or tablespoons. I bought a special falafel scoop in Jordan that makes it easy.

11. Fry them in grapeseed oil, and drain them on paper towel

12. You can eat them in pita bread with cucumber, hummus, salad, tomatoes, tzatziki
