15 to 18 Madeleines

Ingredients:
5 eggs
10.60 oz Sugar
3 drops vanilla
Zest of one organic lemon
8.8 oz flour
8.8 oz melted butter

Preparations:
Butter and flour the madeleines’ cases
Melt the butter
Wash and zest the lemon
Preheat the oven at 210 degrees F
In a pan break the whole eggs, add the sugar, and mix right away
Heat the mixture while mixing, up to a 50 degrees C temperature (use a long thermometer)
When reaching the correct temperature, take the pan out, then add the flour and mix with a wooden spatula
Add the lemon zest, the vanilla, the melted butter and mix with the wooden spatula
Fill the madeleines’ cases with a tablespoon
Change the oven to 350 degrees F
Cook for 15 minutes

When still warm, pick up the madeleines from their cases and enjoy
